Monique Proto
Owner & Baker
Baking has been part of my life for as long as I can remember. What started as a simple joy in the kitchen at a very young age धीरे grew into something much more—a creative outlet, a form of connection, and eventually, a small local business I’m incredibly proud of.
Over the years, I’ve been fortunate enough to pursue not just one, but two passions—running my own private practice and building this bakery from the ground up. Both paths reflect what matters most to me: care, intention, and creating something meaningful for others.
In 2017, everything changed when I was diagnosed with celiac disease. Suddenly, I had to relearn everything I thought I knew about baking. Ingredients I had trusted for years were no longer an option, and the learning curve was steep. But instead of stepping away, I leaned in.
What followed was a journey of trial, error, and determination—reworking recipes, testing flours, and refusing to settle for anything less than delicious. My goal was never just to make “good for gluten-free”—it was to create baked goods that anyone would love, gluten-free or not.
Today, this bakery is a reflection of that journey. Every item is made with the same passion that started in my childhood kitchen, now paired with the knowledge and care that comes from living gluten-free every day.
I’m so grateful to share this with you.
